Explanation: O.k the video doesn't really explain all that much so here's the reason for the change in color. First off, Indigo Carmine acts here as a redox indicator, which means it changes color on electron transfer and not based on pH. It is green when oxidized, yellow when reduced. It is red half-way between the two. Glucose oxidizes in the alkaline solution to form gluconic acid which then reacts with the sodium hydroxide to form Sodium Gluconate. These oxidation reactions reduce the Indigo Carmine into it's yellow color. Shaking the solution oxidizes it again and it shifts back to red.
